Recommended Nutrient Targets


Recommendation 1. The Food and Nutrition Facility of USDA should
adopt the Nutrient Targets as the technical basis for setting standards
for board planning for school meals but should not adopt a nutrient based
standard for school meal planning and nursing.

Recommendation 2
. To align school meals with the Nutritional Guidelines
for Americans and advance the healthfulness of school meals, the
Food and Nutrition Service should adopt standards for menu planning
that increase the amounts of fruits, potatoes, and entire grains; increase
the focus on reducing the quantities of saturated fat and sodium
provided; and set a least and all-out level of calories

Recommendation 3. To attain a reasonable equilibrium amid the goals
of reducing waste and preserving the nutritious integrity of school
meals, the Food and Nourishment Service, in conjunction with state and
local educational activities and students, should consider the strengths and
limitations of the committee’s two choices when setting
standards for the meals as designated by the student
